Sesame oil is pressed from the seed of Sesamum indicum. Two distinct products trade under the name. Light sesame oil, pressed from raw seed, is a pale general purpose cooking and salad oil. Toasted sesame oil, pressed from roasted seed, is dark, intensely aromatic and used in small quantities as a seasoning across East and Southeast Asia. The oil is naturally very stable because of the sesamol and sesamin it carries, and it is also used in pharmaceutical preparations, in traditional medicine and in cosmetics.

Sesame oil is graded on whether the seed was roasted before pressing, on the pressing route, on the seed colour and hulling state, and on the lignan figures that confirm the oil is sesame and confirm how it was made.

Processing route and form

Declared on the contract and evidenced by the production recordHow the oil was taken out of the seed or fruit, and what was done to it afterwards. This is the first term, because it sets every figure that follows and it cannot be tested back reliably once the oil is in a drum.
