Oak Stave
An oak stave is a sawn or split length of oak cut to make the side of a barrel. It is the raw material of the cooperage trade and therefore of every wine, whisky, brandy, rum, tequila and beer that is matured in wood. Oak is used because its grain structure is closed by tyloses, which makes it watertight while still letting a slow exchange of air through the wall, and because the wood itself carries the compounds that a spirit or a wine extracts during maturation. The traded material is the stave bolt, the sawn or split stave, the dried stave, the toasted stave and the finished head piece, together with the inserts, chips and shaved staves used to treat wine in tank. Buyers are cooperages, distillers, wineries and the tank treatment trade, and the two commercial species groups, American white oak and European oak, are bought and priced separately because they are not interchangeable in the glass.
